Discovered that my idlis never come out soft enough unless I add some baking soda before steaming! Even though the batter has risen well, they need soda before I put them in moulds. Any enlightenment on the subject?
you are right, you need to add soda even though the batter has risen well. a better option is adding fruit salt just before pouring the batter into moulds. the second option is seen to give better results. cheers!

u could even add a little cooked rice which has been mashed in a blender to the batter before steaming..
